Marilyn White Bread

Yeast Solution
1 3/4 C warm water
3 T yeast

Allow to grow

Mix together
1 cube of butter/margarine, melted
4 C warm water
1 C powdered milk
5 t salt
6 C flour

Add yeast solution to above ingredients

Add 6-8 C flour (so dough isn't sticky)
Allow to raise to double size

Separate into five loaves & put into pans

Preheat oven 350
Allow to raise for 10 minutes

Put in oven & cover with tin foil
Bake for 25 minutes
remove tin foil
Bake for 10 more minutes

Remove and put on cooling racks
Baste tops of loaves with butter/margarine


Hamburger Zucchini Casserole

1 1/2 lb zucchini
1 1/2 lb hamberger
1 onion
1/2 lb grated cheddar cheese
1 can cream of mushroom soup
3/4 C milk

Brown hamburger and onion
slice and cook zucchini (in little water until tender, drain afterward)

preheat oven to 350 degrees
grease a 9x13 pan (butter or Pam)
arrange layers of meat, zucchini, cheese

top with cheese

mix soup and milk together and pour over the casserole

bake for 35 minutes

serves 8

Cinnamon Rolls

Dough

2 T yeast (heaping)
1 can evaporated milk
3 cans equivalent of warm water
1/2 C sugar
5 t salt
2 eggs
1 cube butter softened

13 C flour (approximate)

collect all ingredients but flour
add flour until dough is desired consistency
beat in a mixer for 10 minutes.
Let raise till size doubles
Roll out on a floured surface


Lightly butter the rolled dough
lightly coat with cinnamon sugar (1 T cinnamon per 1 C brown sugar)


Optional goodies

spread on as desired:
    chocolate chips
    coconut
    walnuts
    almonds
    raisins

Roll up the cinnamon dough
cut into individual rolls
lay out rolls on a cookie sheet, or 9x13 pans
allow to raise
preheat oven to 350-375
cook 15-20 minutes, until golden brown


Frosting

4-6 T butter/margarine
1 lb powdered sugar (amounts to several cups...how much desired frosting?)
1/4 C canned milk
1 1/2 t vanilla
dash of salt

Blend all ingredients together.

 Traci notes on frosting:
- amount of butter depends on amount of frosting being made
- use mild to determine thickness, measurement doesn't have to be exact
- no need to be too precise with vanilla (can't have too much)

Mom's Wassil

Mix together:
1 quart cranberry juice
2 quarts water
6-8 whole cloves
1 t cinnamon
4 cinnamon 
2 C sugar
1/2 C red hots

Heat until red hots and sugar dissolve

Add:
1 large frozen lemonade concentrate
1 large frozen orange juice concentrate

Add additional water (approximately 4 quarts) to taste
Serve hot



Wheat Waffles

A traditional breakfast with Grandpa Gaylon.

1x               3x
1 1/2 C       4 1/2 C        whole wheat flour
3/4 t            2 1/4 t         salt
2t                2T               baking powder
1/2 t            1 1/2t          baking soda
5 T              1 C              oil
2 T              1/3 C           sugar
1 1/4 C        3 3/4 C        buttermilk
2                  6                 eggs

Preheat waffle irons.
Mix dry ingredients.
Separate egg yolks from whites, whip the whites till good and stiff.
Add wet ingredients including the egg yolks.

Gently fold in the egg whites.
Begin baking.

Grandpa's Berry topping
desired amount of frozen blackberries/raspberries/strawberries
sweeten with sugar to taste
2-3 T of corn starch

heat fruit to a boil
dissolve corn starch in water
stir corn starch into berries and continue boiling until it thickens...set aside to cool

For proper Grandpa Hansen waffles, put a scoop of vanilla ice cream on top of a waffle with berry sauce.
